The MCT pumpkin soup

Today you should feel happy. I am going to tell you a special recipe for the best fall pumpkin soup you've tried. This one is made by my boyfriend who cooked our Sunday lunch. I'll show you how to spice up your last days in October.


Prepare your pumpkin before you start cooking the soup. Cut the pumpkin into cubes and save them for later.
First you have to brown one (not so big) onion on some olive oil. Than add salt, turmeric, basil and pepper to taste. After that add your prepared pumpkin and one teacup of water and let it scald for 10 minutes. Next step is to add some garlic and parsley into your soup. Let it cook until pumpkin gets soft (try with a fork). During the process add water slowly.
Now it's time to cook one potato in another pot. When cooked, peel it and add it into your soup. Now you add one liter of boiling water and let it cook for another 10 minutes. Mix it with hand blender.

We don't add cooking cream in this soup, but it's your choice. If you like, you can use rice cream, it's healthier. It tastes great if you serve the soup with roasted pumpkin seeds.

If you didn't know: pumpkin is full of anti-oxidants and vitamin A. Pumpkin seeds are great for heart health and contain a lot of zinc, iron and selenium. Yum!

That day we also put some pumpkin in the oven. I didn't know that tastes so good, I could replace pumpkin with meat :)
